Big Island is our community apple wine - all the apples picked on “our” island, San Juan Island, from our friends’ and family’s trees around the islands. Mixed varieties picked beginning in August with early season pollinators, into November with later ripening more complex fruits. We process the fruit throughout the season in small glass demijons, and create larger blends as time allows in “rolling ferment.”
