Blue Moon Farm Apple 2022
Our favorite orchard we work with, always, on the magical island of Waldron at the edge of the border to Canada. Beautiful old trees with roots deep in old sandstone, leaning towards the Salish Sea. This year, we picked the orchard in two rounds, driving there in our boat twice, picking what we could in between the change of the tides, and heading home before dark. Rebecca and Sam then ferried the apples to us eight boxes at a time over the next couple of weeks as they came to town for supplies. 100% apple, mixed varieties, rolling ferment. Golden in hue and texture. Emblematic of all that we seek to capture when making a sparkling wine from apples. Our grand cru of apple wine.
