In 2022, we produced extremely limited amounts of sparkling wine from some of our favorite special and unusual late season fruits available here on the islands: Quince and Medlar. Combined with the best, very special late season apples from our favorite apple orchard on the islands, Blue Moon Farm, we have created a three pack that allows the complexity, richness and delicious of these fruits to shine.
Valued at $129, from now until December 15th this three pack is available for $99. Production was so limited for these wines this year, that Quince and Medlar will only be available in this three pack.
Quince is one of our absolute favorite fruits to work with. We are planting 25 quince trees this upcoming season with the hopes of making quite a bit more quince wine in the future. But for now, we are content with the fruits from two trees planted in the early 20th century on Midnight’s Farm, Lopez Island.
Medlar is an odd and delightful fruit that requires special care in cooking or fermenting to realize its potential. Hard, brown, and unforgiving in its natural form, we let the fruit ripen in our cold winter winery for months before crushing it into a base of our local apples and letting it macerate for months longer. The result is aromatic and unusual, heady yet weightless, golden yet delicate.
Blue Moon Farm perennially produces apples of such rich, spiced flavor it belies belief. Old trees planted along the Salish Sea, the fruits hang unbothered by the early season farm activities around them, and are the last food to be harvested from the farm for the season. Predominately the thriving Kings of Thompkins apple, blended with other unique varieties planted in the late 1880s on the remote island of Waldron, this is, year after year, our most complex, elegant, and age worthy apple bottling.
