Medlar 2021
We were traveling in Australia in the Blue Mountains a train ride away from Sydney when we were first introduced to Medlar in 2019. A wild and strange fruit grown since Roman times, dry, hard and not obviously delicious, it seemed perfectly suited to a long, slow maceration in the juice of mellow apples to coax out its waxiness and perfume. The fruit comes (so far) from a single tree planted near Bellingham. Fortunately, a friend on the island has twelve young medlars planted, so there is hope for a more medlar-ful future. 60 bottles produced in 2021.
