Midnight’s Farm Quince 2021
This wine is made from apples growing on a very old very large apple tree on Midnight’s Farm, Lopez Island, as well as the fruits from their two quince trees. We crush and press the apples, then we separately crush the quince and allow the fruit to macerate in the apple juice for weeks (about four weeks in 2021). This maceration extracts beautiful quince aromas and light tannins from the skins.
