SHIP BAY Plum + Pear + Apple Sparkling Red 2022

This wine has fermented long and slow. Without worry or rush, knowing the beauty of the 2021 and where the wine was headed, we let is rest and do its thing until the technicolor purple of Italian Prune Plum skins mellowed into the texture of the heirloom pears, finally landing on a cranberry cocktail vibrant ruby hue that seems well suited to any December festivity.

We love this orchard: trees planted back to the original 1860s homesteaders, tended tenderly for the past 30 years by Geddes (current proprietor of the Inn at Ship Bay). The fruits, whether we are eating them or fermenting them, are always astounding in their concentration of flavor. The trees are planted as close as 10 meters to the neighboring sea, where the old sandstone drops into an abrupt cliff, leaving nothing but salt filled air to sweep across the leaves and fruits. We pick the orchard with Geddes throughout the season, and ferment everything together as a true orchard blend.
