Ship Bay Shiro Plum 2021

Geddes, proprietor and farmer at the Inn at Ship Bay, shared some of his Shiro Plum harvest in 2021. We treated the yellow fruits much the same as we have their purple cousins - a mellow maceration, whole, in apple juice pressed from apples from Geddes’ 1880s plantings of Kings of Tompkins Apples Trees planted on the edge of a sandstone cliff overlooking Eastsound on Orcas Island. The delicate perfume of this juicy, giving fruit came beautifully through the resulting wine for a zingy, aromatic bubble.
